How do you create a completely new/different map in minecraft?

I've look this up and tried to word it different ways, but I either get stuff about minecraft servers or how to make a map, which I don't need.

    Any help please?

Just rename your world folder or change the level name by changing the "level-name=" parameter in the server.properties file.

You mean when you are hosting a server?
One way is to change the world's name in the config file, or you can just delete/move the folders are the world you already have

The centre of the map is the block you were standing on when it was created, not at the point where it was first used, and not (necessarily) exactly the same location as the workbench it was crafted on.

but i want to move the center of the map when i craft a new one (preferably one that is at my position *sarcasm*)

basically whenever i craft a map, it basically makes a copy of the old one

You have to use a new workbench and make a new map using the workbench while in the new area.
