Liquid would still be as useful, just I would have liked it to have been a solid, gels are non-neutonion, so it doesn't really matter

Quartz grow in contact with salt water, but won't shrink, liquid is will be fine, just not quite as cool.

You could potentially make a sensor with GEL if it contracts under high pressure, you could then rig up electronics to emit spark
after
GEL has left contact with the sensor block. That way, it would stay realistic.
