 Well, from what I can tell, people want elements with many new, unique interactions that can provide a plethora of new interesting element combinations. Quarks, up and down provide just that. New interesting interactions. The usefullness of quarks will be brought to light when people actually get to use it. I can't really think of any of the top of my head, but I'm sure that there are many uses.
