In fact, the more time you spend flying upwards, the more velocity you lose due to Earth's gravity, so a rocket gradually starts flying sideways almost immediately after clearing the launch tower. It aims to fly completely horizontally only as soon as it is out of the thick parts of the atmosphere which would slow it down quickly on the ground. This happens around 30 - 40 km above the ground.

The sideways flying is actually an important part of spaceflight. If you just fly up, you will fall down quickly. You need to fly sieeways really fast to literally miss the ground when falling down - this is what's called an "orbit". Earth's low orbit is about 200 km above the surface and the speed there is around 8.5 km/s - so you actually fly sideways much more than you do upwards.

paste tpt.setfpscap(2) in console to make it fly faster

Yeah this save could definitely benefit from having more pistons to provide a more fluid movement

The sideways flying is maybe the rotation of the Earth?

How did this get FP? Im pretty sure a rocket taking off that slowly would either tip over or run out of fuel really quickly and I really think that a rocket flying sideways is a bit odd.
