    brainwave, the bubbly water does not turn into water vapor, it turns into carbon dioxide, also it never heats up enough to evaporate.

    Due to the lava heating the bubble water to evaporation it produces gases increasing the Pressure and causing it to expand outward like a explosion, Hope I helped :)

    I have performed a similar experiment a while ago - see ID:1876734. However, neither I nor any of the commenters found a definitive explanation of this effect. The question is still open, as far as I know.
