    @dragonouhai: that is exactly what happens IRL. the vapour forms an insulating layer between the water and surface, slowing heat transfer. e.g. when a surface is just over 100C, water will evaporate quickly when pured on it. over the leidenfrost temperature of water(about 193C on a frying pan), water will form droplets that evaporate slowly and 'float' around the surface.
