I use a 1px brush and just start having a seizure for the leaves, for the trunk I use the same brush size but do it in more of a vertical motion.
The roots are hard though, you have to start with a large stump and get smaller roots and more sub-roots as you go down.
It's hard to explain as I suck at explaining and because it's just natural for me...
