    In that case, I'm asking for something like Portugese carracks but a little bigger: lots of sails, decent sized but not massive, moderate sized crew, etc.

    Well typically the larger the ship the larger the crew and amount of money and resources you need to spend on them. Also bigger could mean slower or able to carry more stuff. More sails typically means faster. Aesthetics for flavour and to value. The exact designs can give you an edge in certain situations.
