    They don't get replaced in any known organism. There's no theoretical reason why they can't be, it's just that no animal that we know of has yet evolved the capability. Also, an organism that used a different type of neural net instead of neurons as we know them, wouldn't necessarily have this problem. An alien being using a metallic or crystalline network instead of an organic one could quite possibly live forever.

    the reason for this is that neurons are vulnerable, and destroyed neurons don't get remade

    actually, if jellyfish were to develop a brain, the brain (which would be able to control its age) would be unaffected by the age reverting abilities of the jellyfish (unless the jellyfish could manipulate neurogenesis, which is a way deeper rabbit hole)
