This is currently intentionally made impossible by the save parser (it weeds out colour codes from signs). Signs shouldn't be an important enough part of your save to require colours. Furthermore, a sign being colourful historically means that it's special and does something interesting (create sparks, redirect to other saves, open threads, search); it'd be confusing if suddenly there were signs that were colourful but did nothing.
